Bhubaneswar: The ongoing Thai Food Festival in the city has a variety of platter laid out with delicacies from Far East.
The Chief Chef Sibanand Panda of Mayfair’s Lemon Grass spoke to Odisha Bytes about Thai food and the festival, which began earlier this month and will conclude on July 30.
Panda said the festival is being organised to promote Thai food. “It is quite different from Indian cuisines. The different flavours used, especially in non-vegetarian dishes, can have you addicted to them. We decided to celebrate the essence of Thai food as city denizens have enjoyed such feasts in the past,” he added.
One of the interesting cuisines, Panda said, is the Thai curry – green and red with assorted vegetables. “The green one is spicier than the red,” he said.
Likewise, jasmine curry and coconut curry are a must try, he added.
“Tofu, prepared with Soya milk, will have you craving for more. Even the Lemon grass pomphret and Thai fish cake are something to hog on,” Panda said.
The chefs in Mayfair, he said, have a yearly calendar marked with different food festivals. “At Mamammia, we have Italian Pizza special and flavour of the month is grapes,” Panda further said.
